Happy Easter! Hope everyone enjoyed the long weekend.

We had a fun but busy weekend. The weather has been beautiful, a balmy -3 and sunny ๐Ÿ™‚ Long walks having been happening daily.

????????

A beautiful friend popped by a for a visit and brought us a little taste of spring. They’re currently hiding out on our fireplace mantle so that the kitties won’t eat them. Who am I kidding those little guys can get anywhere if they really want to ๐Ÿ˜‰

Saturday felt like a mommy spa day – even if it was just getting to the gym and getting a hair cut. Amazing how the little things seem like even more of a treat these days.

Sunday marked our first attempt at going to a friend’s place for dinner since having the baby. Henry usually naps for a half hour at 5pm and then is in bed for the night by 7pm so evening outings have been kyboshed for the most part. Prior to this we’ve had friends come to our house for dinner so that one of us could discreetly disappear to put little Mr. H to bed. I was really nervous about Henry being over tired and losing it but thankfully there were no meltdowns. Felt like a rebel being out until 8pm ๐Ÿ˜‰

We were tasked with bringing dessert so I whipped up a few batches of these delicious raw tartlets. I switched things up a little bit making half of them into little mini cheesecakes with reduced sugar strawberry jam on top. They were delicious! The first time I made they I found they were a little challenging to get the shells out of the muffin tin without crumbling. This time I added a little more dates to the mix and problem solved.
